Christmas Dinner

After our fun trip to Blowing Rock, we headed back to our house and had our annual family Christmas dinner.  We planned one night of cooking/eating at home and one night out and Friday night was our night in.  My parents brought a nice filet mignon and some Hilton Head fresh shrimp to cook up, and I supplied green beans, potatoes, and the ingredients for our family's mac and cheese.

While most of us helped with the cooking, my dad entertained Clyde.

He also made a mean batch of margaritas for us.

They are made with equal parts of fresh lime juice, Cointreau, and Tequila.  That's it!  I actually add OJ or Pom to mine to cut the strength.  I'm a light weight!



We cooked and nibbled on chips and salsa, and then it was time for the main event.

We ate in the dining room, a room which only gets used about 3 times a year in my house!  Greg and I usually eat at our island, so the poor dining room doesn't get used much.  Everything was delicious!  Clyde also enjoyed some scraps of filet and shrimp at the end of the meal.

Would love a recipe for the potato pancakes. They look very yummy.

Actually, you can totally cheat with the potato pancakes and use Simply Potatoes (those pre-shredded potatoes used for hash browns) and then this basic recipe:


Ingredients

* 4 large potatoes
* 1 yellow onion
* 1 egg, beaten
* 1 teaspoon salt
* 2 tablespoons all-purpose flour
* ground black pepper to taste
* vegetable oil for frying

Just mix everything together except the oil and then shape into pancakes and fry until golden brown in the oil. We put ours on a cookie sheet and kept them warm in the oven while we were finishing cooking everything else.
