I was happy to see him when I got home, and got to work on dinner. I decided to make Italian style stuffed peppers with Quinoa. I used two large peppers, an orange and yellow and cut them in half. I placed them in a casserole dish with about an inch or two of water and microwaved them for about 5 minutes before flipping them and cooking them another 3 or so to soften them.
Meanwhile, the filling was going. I did 1 cup of Quinoa cooked in 1 cup of water and 1 cup of Veggie broth.
I also made a mixture of onion, garlic, veggie crumbles, a can of diced tomatos with their juice, some spinach, and some chopped artichoke hearts, seasoned with dried basil and oregano.
Once done, I drained the water from the peppers and put a little EVOO in the bottom so they wouldn't stick. I mixed the Quinoa with the veggie mixture and heaped each pepper half with the mixture. I then baked the peppers at 400 degrees for about 15 minutes, adding a slice of provolone to each pepper and cooking for another 5 minutes or so.

He looks excited to go back to work, right?
Well, at least we got to have a homecooked healthy dinner together.

OMG those peppers look amazing. That is one of the few dishes my mom made when I was younger so I thought I was burnt out on the stuffed peppers but seeing this post has changed my mine! :)
