1. I have been my usual busy self (out with friends two nights this week- Monday and Tuesday) and when I've had downtime, I've chosen to run, play with my puppy (who I will miss while in Chicago for the Healthy Living Summit this weekend), Twitter (it's become my new time wasting online tool), or flat out lay on the couch and watch some TV so I could actually attempt to decompress.
2. I'm prepping for the Healthy Living Summit. I actually have spent a bunch of time this week packing and trying various outfits to try and make sure I bring the appropriate attire. I realize this is futile, since I will no doubt overpack per usual anyways.
3. I've been doing some thinking about my blog and my posts and feel like I need to maybe beef up the content a little more and/or try to make things a little more cohesive. I struggle a little with how to blog because (time for sub letters!):
A. My blog still kind of has the identity crisis of being a pilot's-wife blog turned healthy living blog. I have a love/hate relationship with that. I LIKE that I have a unique twist when there are a lot other topic specific blogs that are ONLY pilot wife or healthy living and mine is a little of both. I think I'm a little bit original in that way. On the other hand, it makes it hard to fully commit to topics when you are wondering if your readers are like "what the heck is she doing?" when I go back and forth on aviation, food, fitness and other stuff. I still kind of over think it.
B. I feel like a lot of my blogging is journaling my personal happenings and sometimes wonder if that's really that exciting to read. Especially since I'm not sure my life is really that exciting to anyone.
C. I'm wondering if I should pick more concise topics to post about instead of mind-dumping my
thoughts and happenings.
D. I really like posting pictures, because I know I am very visual and especially enjoy blogs with lots
of pictures, so sometimes I end up with less written content and a picture journey of my life. I might need to work on balancing my pictures with more written content on some of my posts. Food for thought...
I welcome feedback on this, even though I know I've kind of addressed some of this before. Seriously, if there is stuff you WANT me to blog about. I'd love to know. I've spent whole blog posts just answering one question. It gives me direction ;)
Ok, onward! Here's some of the highlights of my weekly activities:
Tuesday night I met my friend Josie for dinner at Six Pence Pub
It's a great restaurant with great pub style food. I often get a salad or their awesome pork roast (so tender), but on Tuesday night I opted for an actual beef burger. I haven't had one in ages. It was pretty yummy! Here's what was left of my dinner, a little less than half the burger and about half the fries. This was my dinner Wednesday night along with a salad.
I also had a glass of Pinot Grigio (1/2 price!) and the pub fries. I know, not the healthiest dinner, but I've been eating pretty healthy in general so I splurged that night. Josie and I had a nice chat.
In other news I was really good about packing my lunch every day this week! I do like to eat out occasionally (ok, sometimes more than occasionally) because it really breaks up the monotony of being in the office all day. Plus, if i don't leave my office, I inevitably get calls or visitors and end up working through lunch. But this week I had two visits to Greenapple for my knee during lunch, so packing was essential on those days in particular. One of the cool things I brought two days this week was tortillini pasta salad with spinach tomatos, artichoke hearts, roasted red pepper, sundried tomato, and some cottage cheese. Yummy!
Wednesday night I decided to try running again. I did two short runs last weekend and they went pretty well. This time I upped my mileage to about 3 miles. IT FELT GREAT! I was so happy. It was hot and there were hills, but I really didn't care. I was just psyched to be feeling good and rolled with it!
After my run, I decided to do a little baking. I made Carrots N' Cake's Coconut Date Cookies.
I sometimes have trouble melting chocolate, so instead of drizzling, I ended up sorta smearing the chocolate on top! They were pretty good! Hubby likes em.
Tonight I got home and made Chik'N patties with tomato sauce and provolone with salad.
My latest thing is adding blueberries to my salads! This one had lettuce, spinach, feta, carrots, blueberries, and a drizzle of balsamic, EVOO, and lemon juice. Yummy combo :)
Time to pack for the Healthy Living Summit!!! I've been getting a little jealous of all the bloggers that got in yesterday and today and are already living it up there (I see them talking about it on Twitter!).
I also need to cuddle this little baby a little more before I head out!
I hope to met some of you in Chicago! Say hi if you see me. I'm nice, I swear! :)
