Ups and Downs

It was back to the grind for me yesterday after my awesome three-day weekend, and I think I left my mind in Hilton Head...




So did Clyde...


Honestly, it was not the best day for me.  Greg's schedule is still very up in the air (no pun intended...ba dom chink) right now, and this is probably the third time in two weeks we thought he'd be coming home and then couldn't, because of schedule changes.  The problem is that he finished ground school in the middle of the month, and therefore doesn't have a set schedule, so they can basically do whatever they want with him.  Luckily in March, he does have an actual schedule, so it will be nice to know when to expect him home again and have it be more concrete.  I got pretty bummed out when I realized he wasn't coming home last night as we originally thought.

The highlight of my day was probably when Diana sent me a message asking if I wanted to meet her for fro-yo at a new place called The Frozen Isle near our offices.  Um, YES please!  I had eaten a boring lunch consisting of noodle bowl and carrots at my desk and jumped at the chance to get outside for a few minutes.

I had a mix of cake batter and blueberry fro-yo with fruit and coconut.  We were both disappointed that they didn't have mochi, but the store assured us it was coming.  Next time!

 I thought about going to yoga last night, but didn't make it home in time for the class I was thinking about going to.  I took Clyde for a walk instead and then got started on dinner.  
Did you know that yesterday was actually National Margarita Day?  I actually did know, but wasn't in the mood to make margaritas without Greg (he LOVES them), so I decided to make something else to drink: Sangria.

I had a bottle of white wine sitting in the fridge, so I just took some strawberries and oranges, some grenadine and maraschino cherries, and some ginger ale, and threw it all together.  It was pretty good!


I had about half an eggplant sitting in the fridge, so I decided to make Eggplant Parmesan.  
I used Jen's recipe, which is a baked version.




I also decided to try my hand at kale chips again.  You may remember last time I tried this it was a kale fail.  This time I drizzled with olive oil, used less salt, and then put it in the oven on 400 degrees (since that was the temp the eggplant was cooking on), and only cooked it for about 8-9 minutes before it was done.  It actually came out GREAT this time, and now I understand what all the hype is for.  They are pretty tasty when done right!



All together...




Yum :)  I spend the remainder of my evening catching up on Brothers and Sisters and Glee on Tivo.  I miss Greg and hope he gets to come home soon...

Sorry to hear about this. I spent a year apart from my now husband when he was a freshman in college and I was finishing high school. And it SUCKED! So I totally know what you mean. Hopping something works out for you soon!

I have yet to try kale too. I think the hype is getting to me. :-)

I feel like a barely see much of my husband either. He works in law enforcement for NC state and when he gets off his 12 hour shift in the mornings it's straight to bed he goes. It's like I see glimpses of him, but I know that he is working hard to serve and protect and provide for our family.

Thank goodness for technology to keep me company.

Brittney - I can only imagine how frustrating it must be for Greg to be on that type of schedule. There is nothing worse than getting excited about something and then it falling through. I'm happy to hear he will be on a more normal schedule soon. You have every right to feel kind of down about not being able to see your husband!!!

Thanks for the shout out on the eggplant parm. Glad you enjoyed it. I love eggplant so much - it's delicious. :)
