Welcome to Charlotte Bloggie Brunch!

I awoke this morning and got right down to business on making PIE.  Specifically BLUEBERRY PIE.  I was invited to a bloggie brunch welcoming Katie to Charlotte at Diana's house.  A couple years ago I was big into baking pies.  One summer I got on this pie baking kick and was making apple, peach, blueberry, etc...  I was even given a pretty pie baking dish and recipe book by some people who visited us and noticed my pie fetish...lol! 
These days I keep my pie baking to a minimum though.  For some reason when I was trying to decide what to bring to this event, blueberry pie popped into my head and there was no stopping me.  The only thing to consider was what recipe to use.  I did a variation of a couple.  I wanted to try an almond crust, but I love the filling in my family recipe.
Here it is:

Brittney's Blueberry Pie

The crust:
1 cup whole wheat flour
1 cup all-purpose flour, plus extra for rolling out dough
1/2 cup finely ground blanched almonds or almond flour (i ground slivered almonds in the food processor)
16 tablespoons (2 sticks) unsalted butter
1 teaspoon salt
1 tablespoon brown sugar
3 to 6 tablespoons very cold water

Filling:
6 cups of fresh blueberries (washed and dried)
1/4 cup brown sugar
1/4 cup white sugar (also known as "white satan") 
1/2 cup flour
1/2 teaspoon of cinnamon
1 tablespoon of fresh lemon juice
1 tablespoon of cut up butter

Directions:
First, cut up your butter in to smaller cubes and freeze for about 10 minutes.
Then pulse the dry crust ingrediants together in a large food processor or mix in a bowl. 
Add the butter and pulse (or cut with knives or pastry cutter).  Add several tablespoons of COLD water until you can form a dough.  Seperate dough into two halves and shape into discs.  Chill in fridge.
Set oven to 400.
Wash blueberries and dry.  Mix them with all the filling ingredients except the butter until thoroughly covered. 
Roll dough out and place half in the bottom of the pie pan.  Dump filling in.  Dot the filling with the butter pieces.  Roll out top dough and crimp to the bottom dough.  Make cuts in top pie crust to ventilate.  Line edges of crust with foil (they cook quicker so they will burn if not covered).  Place pie in oven and cook for 25 minutes.  At 25 minutes, reduce oven heat to 350 degrees then cook for another 35-40 minutes.  Remove foil from edges for the last 15 minutes.

Then it was off to Diana's for brunch!
I was greeted by Bailey (so was everyone else!)


In attendance were Kelly, Katy, Diana (hostess with the most-ess), Katie (guest of honor!), Caitlin, and I.  Also, Diana's husband, Kelly's husband-to-be, and Katie's boyfriend.

It was all DELISH!  I know it seems like I have a different bloggie event every day now, but these girls are so fun, we're just having a blast getting together :)

I live in Charlotte too! I actually met Katie the other day at yoga. :)
Your blueberry pie looks absolutely beautiful. And of course brunch wouldn't be complete without mimosas!

@Diana, I'm glad you liked the pie! ALL the food was fabulous, you did a great job as a hostess (I often get frazzled when entertaining!). Can't wait to do it again sometime! I will host if you guys are willing to come my way!

Your pie looks amazing! Can I substitute regular flour for the almond flour or something else? The husband is allergic to nuts!

I'm pretty sure you could use any kind of flour- all purpose, wheat, spelt, etc... It shouldn't change the consistency, just maybe the flavor a little bit.
