I got going to meet some pretty famous bloggers for a run/walk on the greenway in Charlotte. Jen and I carpooled and met Kelly, Jen, and Kath at her house and headed to the greenway. Emily was already there doing a marathon training run. Jen had surgery on Friday and I opted to stay with her and walk so she wouldn't be alone.

Post-run we headed back to Kath's house and had quite the spread of food for lunch. We had two different kinds of bread from Great Harvest, two different kinds of jam, Kath's awesome spread of butters- including coconut, Biscoff, and Nutzo, brie cheese and herbed cheese, fruit salad, muffins, oatmeal raisin cookies, and I brought Roasted Red Pepper and Artichoke Heart Hummus. Recipe as follows:(picture taken by Kath...how I forgot to bring my camera to a blogger meet-up, I do not know!!)
-1 16 oz can of chickpea and 1/3 can of liquid from can
-about 6 halves of artichoke
-about 1/2 a roasted red pepper
-1 1/2 tablespoons of tahini
-2 cloves minced garlic
-1 tablespoon fresh lemon juice
-1-2 tablespoons of olive oil or I just used some oil from the artichokes.
Blend everything in the food processor until desired consistency. I served mine with some carrots, cucumbers, and celery and some pita chips. It was good stuff :)
Lunch with the bloggers was a lot of fun and the food was delicious. I really enjoyed getting to meet people who's blogs I've been reading all this time! Thanks for a good time girls!!

Did Kath have a slightly green tinge from the excessive amount of green monsters she consumes? I kid, Caitlin's also going to be a neighbor of yours soon.

Definitely! Once I'm up and running again (even half decently) we've got to do a race or some sort of trip together.
I'm glad we finally pulled this together. Your hummus was a big hit. I didn't have any idea that there were artichokes in it. That's a great idea!
@ Kel (foodie fresh) What can I say, I really know how to throw things into a food processor and push the button...lol! Thanks for the compliment though! The hummus is making an appearance in my turkey wrap for lunch today. Your brie and herbed cheeses rocked too! I could totally do a repeat of yesterday's lunch and be happy!

I live just north of Charlotte and would love to do a blogger meet up! I'm not much of a runner though... but if there is ever another activity planned (like eating ;)) give me a shout!
